This is a really good comfort meal, especially if you like spicy Korean food. May want to hold off on the gochujang if your kids can’t handle spice, but other than that it’s a winner.

- Place the chicken thighs in a Dutch oven
- Add onion, gochujang, soy sauce, honey, and garlic.
- Pour in enough water to cover the chicken. Stir everything and boil over high heat
- Once it starts to boil, reduce the heat to low to maintain a simmer
- After 20 mins, add the potatoes and carrots and continue cooking for 15 more minutes or until the carrots and potatoes are tender
- Serve over 1/2 cup of steamed white rice
