Spicy Braised Korean Chicken (Dakdori Tang)

This is a really good comfort meal, especially if you like spicy Korean food. May want to hold off on the gochujang if your kids can’t handle spice, but other than that it’s a winner.

  1. Place the chicken thighs in a Dutch oven
  2. Add onion, gochujang, soy sauce, honey, and garlic.
  3. Pour in enough water to cover the chicken. Stir everything and boil over high heat
  4. Once it starts to boil, reduce the heat to low to maintain a simmer
  5. After 20 mins, add the potatoes and carrots and continue cooking for 15 more minutes or until the carrots and potatoes are tender
  6. Serve over 1/2 cup of steamed white rice

This is healthy, filling, comforting and has a good amount of protein. The soup mixture without the rice has very close to a 10-to-1 calorie to protein ratio so get seconds if you want!
